do you have a recipe that you will always use and probably never steer away from?
like… brownies? (alton brown’s cocoa brownies for me)
chocolate chip cookies? (jacque torre’s 24 hour cookie)
carrot cake? (thomas keller’s ad hoc carrot cake!)
for me, my stalwart banana bread recipe will always be the browned butter banana bread. it’s been tweaked here and there… Some nuts here, shredded coconut there… But the core of the recipe will always be the original from Ruhlman’s Ratio. It never fails, you know why? BECAUSE SCIENCE! IT MAKES SENSE!!! (also, the browned butter. because browned butter is glorious)
