And a new home means a new recipe! (kind of)

Ninjin Kinpira

This is some­thing I’ve been mak­ing lately. I nor­mally munch on baby car­rots through­out the work day to keep my hunger at bay, but some­times my jaw hurts too much for intense munch­ing… So I cook ‘em.

Kin­pira is a stir fry of root veg­eta­bles, sesame oil, soy sauce, and mirin (sherry). It’s a clas­sic Japan­ese side dish, and I usu­ally make it with juli­enned gobo root, sliced lotus root, or car­rots. Its salty and sweet, and goes so well with rice! Plus, it only takes like 5 min­utes to whip up, so if your din­ner is look­ing a lit­tle lonely, this dish will always come to the rescue.

Nin­jin no Kin­pira (Car­rots & Sesame Stir Fry)

1 car­rot, juli­enned
2 tbsp soy sauce
2 tbsp mirin
1 tsp sesame oil
1 tbsp sesame seeds
bonito flakes

1. Heat a fry­ing pan over medium-high heat, and pour in sesame oil.
2. Throw in car­rots and stir fry for a few min­utes.
3. Move car­rots to one side of the fry­ing pan, and pour in soy sauce on the naked side. Let it bub­ble away and caramelize a bit, and quickly stir fry to mix. Repeat with mirin.
4. Remove from heat, and mix in sesame seeds and bonito flakes.
5. Kin­pira holds for a few days refrig­er­ated in a sealed tup­per. Nom with hot white rice!
