Yaaaaaaah a new home!
And a new home means a new recipe! (kind of)
This is something I’ve been making lately. I normally munch on baby carrots throughout the work day to keep my hunger at bay, but sometimes my jaw hurts too much for intense munching… So I cook ‘em.
Kinpira is a stir fry of root vegetables, sesame oil, soy sauce, and mirin (sherry). It’s a classic Japanese side dish, and I usually make it with julienned gobo root, sliced lotus root, or carrots. Its salty and sweet, and goes so well with rice! Plus, it only takes like 5 minutes to whip up, so if your dinner is looking a little lonely, this dish will always come to the rescue.
Ninjin no Kinpira (Carrots & Sesame Stir Fry)
1 carrot, julienned
2 tbsp soy sauce
2 tbsp mirin
1 tsp sesame oil
1 tbsp sesame seeds
bonito flakes
1. Heat a frying pan over medium-high heat, and pour in sesame oil.
2. Throw in carrots and stir fry for a few minutes.
3. Move carrots to one side of the frying pan, and pour in soy sauce on the naked side. Let it bubble away and caramelize a bit, and quickly stir fry to mix. Repeat with mirin.
4. Remove from heat, and mix in sesame seeds and bonito flakes.
5. Kinpira holds for a few days refrigerated in a sealed tupper. Nom with hot white rice!
